MOA Foodtech takes its yeast-declared egg replacer onto industrial bakery lines

What Happened

MOA Foodtech has teamed up with Spanish cereal innovation centre Espiga I+D in a 'Bakery Innovation Alliance' to validate its MOA Q5 egg replacer on pilot and semi-industrial equipment, including lines with lamination and rounding. Q5 is a single-ingredient biomass-fermentation product made from starch-rich industrial by-products, declared as 'yeast' on the label, non-GMO and not requiring Novel Food authorization. It has been validated in bakery, pastry and pasta, and manufacturers can access samples and support to cut egg and the E-471 emulsifier.

Why It Matters

Three years of volatile egg prices tied to avian flu, plus retailer and consumer pressure for shorter ingredient lists, are pushing bakeries to reformulate. Validation on industrial lines addresses the step where many egg replacers fail: moving from lab-bench recipes to machinery.

An egg replacer only counts once it survives the lamination line.

Testing on lamination and rounding lines matters because egg and E-471 do structural work in laminated doughs, so a replacer has to survive sheeting and folding, not only a mixing bowl.
